I whipped up these cookies in my kitchen one day after I had opened a can of sweetened condensed milk to make a Vietnamese coffee and wasn’t sure what to do with the remaining milk. These cookies are crispy around the edges yet chewy on the inside. I suppose ‘crisp’ isn’t the best name for it but I didn’t think it fit into a ‘cookie’ category either. These are very simple to make and has that caramel-y goodness of dulce de leche. They go wonderfully with a hot steaming cup of coffee, almost like a deconstructed Vietnamese coffee!
You will need:
1 can sweetened condensed milk
1 tsp salt
2 tbsp unsalted butter
3 tbsp flour
1 medium heavy bottomed pot
Cookie sheets lined with parchment paper or silpat
Preheat oven to 350 degrees fahrenheit
1) In a pot, heat the condensed milk over medium heat. Add the salt and butter until melted, stirring often.
2) Whisk flour into the milk and mix well until there are no more lumps
3) Set mixture aside and let cool for 10 minutes. Quickly spoon 1tsp sized dollops of mixture onto the cookie sheet, approximately 1.5 – 2 inches apart.
4) Bake until the crisps are golden brown.
