This focaccia is easy and delicious. Adapted from my bread recipe I posted last week here. Great as part of a weeknight dinner or if you are entertaining. I used jarred marinated artichokes and sweet yellow bell peppers, each flavour balancing each other well between tangy and sweet.
You will need:
1.5 lb of bread dough (if you are not using a homemade dough you can buy pre-made pizza dough from the grocery store)
1/2 cup marinated artichokes roughly chopped
1 sweet bell pepper thinly sliced
1 clove of garlic thinly sliced
1 shallot thinly sliced
1 sprig rosemary
1 tbsp olive oil
1 tsp sea salt
1. Preheat oven to 450 degree.
2. On a pizza stone or baking sheet, spread our the dough to roughly 3/4 inch thickness with your hands. You don’t have to be perfect, a rustic shape is fine. Once spread out, create divots in the dough by pressing your fingers into the dough.
3. Brush olive oil evenly. Sprinkle salt and rosemary. Spread out the remainder of the ingredients evenly.4. Bake for 35 minutes until golden brown.
